Homemade Brownie Ice Cream Sandwich

Note: For this brownie ice cream sandwich dessert, you will need a 12 cavity ice cream sandwich pan.
Makes about 6 brownie ice cream sandwiches.
- 1 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup butter
- 1 1/2 cups semi-sweet chocolate chips
- 2/3 granulated sugar
- 2 eggs
- 1 teaspoons vanilla extract
- 1-quart ice cream (any nut-free and safe flavor)
- Assorted toppings, including sprinkles, mini chocolate chips.
- 1 cup of semi-sweet chocolate chips (to temper and dip brownie ice cream sandwiched in)
- Preheat oven to 325 degrees. Spray Ice Cream Sandwich Pan with baking spray. Set aside.
- In a small bowl, combine flour, baking soda, and salt. Set aside.
- In a double broiler, melt butter with the chocolate chips. Whisk in sugar, eggs, and vanilla; beat well.
- Add flour mixture, stir until just combined.
- Spoon 2 tablespoons batter into each pan cavity, spreading evenly.
- Bake 8-10 minutes or until a toothpick inserted at an angle into the center comes out clean.
- Immediately unmold brownies onto a cooling rack. Cool completely.
- Scoop about a 1/4 cup ice cream onto smooth side of half the brownies.
- Top with remaining brownies, pressing gently.
- Temper 1 cup semi-sweet chocolate chips.
- Place two-thirds of the chocolate in the top pan of a double boiler. Heat over hot, not boiling, water, stirring constantly with a rubber spatula, not a wooden or metal spoon, until chocolate reaches 110°-115°F.
- Place the top pan of the double boiler on a towel and cool to 95°-100°F.
- Add the remaining one-third of chocolate to the top pan, stirring until melted. The chocolate is now tempered and ready to be used for molding candies, coating or dipping.
- Coat dipped ice cream sandwiches in assorted toppings.
- Place in freezer to set.
- Once set, wrap and freeze immediately.
