Thinking up new ideas for lunch can soon get boring and repetitive especially if you're trying to keep it healthy. This Green Goddess Soup recipe is perfect as you can adapt it using any of the green vegetables you already have in your kitchen.
It takes just 10 minutes to make so it can easily fit into your busy schedule. I also think soup is a great option if you work in an office. You can quickly make it the night before, store it in tubs and then heat with a microwave at work for an instant delicious meal. I haven't even mentioned the best bit about Green Goddess Soup, it's ridiculously healthy, and you're going to love it!
Green Goddess Soup Recipe
I have listed suggested ingredients below but you can change it up however you like depending on what veg you have in and what are your favourites.
- 1 large head broccoli
- 2 small courgettes
- handful of basil
- 4 – 6 tablespoons pesto
- 2 cloves garlic
- salt and pepper to taste
- Get together all the green vegetables you have in your kitchen or follow the list I suggested and chop them up into small chunks. Add them to a medium sized saucepan.
- Carefully add boiling water so it covers the vegetables and slowly heat up to a gentle simmer and leave until all the vegetables are soft, stirring occasionally. For the extra flavour stir in the pesto, and garlic.
- Blend the soup together with a hand blender until smooth or to your desired texture then heat back up if you're eating straight away.
- Season with salt and pepper to taste and sprinkle on freshly grated parmesan if you're feeling a bit naughty!
